Nylon Khaman Idlys



Nylon Khaman Idlys



Makes: 24 Idlys 

Ingredients

1. For The Batter

A. Besan/Gram flour 2 cups
B. Sooji/Rava 3 tbsp
C. Turmeric Powder 1/4 - 1/2 tsp
D. Salt
E. Oil 4 tbsp 
F. Eno(fruit salt) 3 tsp
G. Ginger paste 1 tsp
H. Green chilli paste 1 tsp
I. Sugar 3 tsp
J. Citric acid 1 tsp
K. Water 2 cups

For The Tadka

1. Oil 2 tbsp
2. Mustard 1 tsp
3. Curry leaves 1 sprig 
4. Slit green chillies 4
5. Hing 2 pinches
6. White sesame seeds 1/2 tsp
7. Coriander leaves a handful
8. Shredded coconut 11/2 - 2 tbsp

For Sprinkling

1. Warm water 1/2 cup
2. Sugar 1-11/2 tbsp


Method Of Preparation 

1. In a bowl, add gram flour, sooji, turmeric powder, salt, sugar & citric acid.



2. Mix everything together & using ur hand, try to break the lumps in the besan.



3. Add water to this. Do not add all the water at a time, just keep adding little at a time. Add a little water, then using a spatula mix really well so that there are no lumps, then again mix some more water & repeat. Do this till there are no more lumps in the batter & it becomes smooth.



4. The batter will be watery it that is absolutely fine. Add ginger & green chilli paste, mix well. Add oil & again mix well.




5. Now keep the batter aside.

6. Grease the idly moulds with oil & set it aside.

7. Now it's time to work on the batter again & this time you need to be really quick do have everything ready before you start working on the batter again.

8. Add eno to the batter now. As soon as u add eno, you will see the batter bubbling & rising & becoming really smooth & fluffy.



9. As soon as u add eno, u need to stir the batter quickly. Keep stirring & mixing well so that the eno mixes well in the batter & stir well till the batter becomes smooth & fluffy. You will also see that the batter has risen(almost to double its size).

10. Immediately add this batter to the greased idly moulds & put the moulds into the steamer. Cover it & turn on the flame & cook on medium-low for 40 minutes.



11. You know the Idlys are cooked when a tooth pick or skewer inserted into the middle of the idly comes out clean.

12. When the Idlys are getting cooked, make the tadka.

13. Once the Idlys are done, take them out of the steamer & put the Idlys with moulds on ur counter top & sprinkle sugar syrup on them.

14. After a minute, u can scoop the Idlys out of the moulds onto a plate.

15. Make sugar syrup & sprinkle it on the Idlys & garnish with the tadka, sesame seeds, shredded coconut & coriander leaves.

16. Serve with mint-coriander chutney.



Preparation Of Tadka

1. Heat a oil in a pan. Add mustard seeds. Once it splutters, add the curry leaves. Then add the green chillies & sauté for a few seconds & finally add hing & turn off the flame.

Preparation Of Sugar Syrup

1. Take 1/2 cup of water & warm it up & add about 1-11/2 tbsp sugar in it. Mix it well.

Notes:

1. For those of you who dont know what eno is, here is a picture of the eno bottle.



2. It took 40 minutes for my Idlys to get cooked. Yours could take less or more time, so keep checking after 20 or 25 minutes.

3. Once you add the eno, you need to be quick. Also, finish off the batter in one go, don't keep the batter for later use. If u feel the above quantity is a lot for you, you may reduce to 1/2 or 1/4 of everything.

4. You may increase or decrease the quantity of sugar in the syrup as per your wish. The sprinkling of sugar syrup really makes these idly super soft & spongy. If the above said quantity is not enough, then you may make some more syrup.

5. This dish tastes best only with mint-coriander chutney so please prepare that😊

6. I forgot to add turmeric powder to the dry ingredients, so I added it after adding water but make sure you add it to the dry ingredients.

7. Follow all the steps exactly & I'm sure you will be able to make the best super spongy nylon khaman idlys😊
