Molten Lava Cakes



Molten Lava Cakes





Makes 6 6 oz(approx) cups

Ingredients 

1. Chocolate chips/baking chocolate 2 cups
2. Butter 1/6 cup
3. Eggs 4 whole eggs plus 4 egg yolks
4. All purpose flour/maida 8 US tbsp
5. Vanilla essence 2 tsp 

For Decoration

1. Icing sugar 4 tbsp 
2. Strawberries
3. Ice cream of your choice 

Method Of Preparation 

1. Add the chocolate chips/baking chocolate in a microwave safe bowl along with butter & microwave it for 2 minutes or until melted stirring every 30 seconds.






2. Take it out & mix well & add the vanilla essence to this. Mix well.






3. Add the whole eggs & egg yolks & beat this well until everything mixes together & forms a uniform batter. Beat till everything mixes well.



4. Now add the flour & again beat well till everything mixes well. Do not meet for too long.




5. Grease ur ramekins with a non stick cooking/baking spray & add the batter upto 3/4 of the ramekin.



6. Pre heat the oven to 450 F

7. Put these ramekins on a baking sheet & pop it into the oven & set the timer for exactly 8 minutes.



8. Take it out the oven & allow it to cool.

9. Then just invert the bowls over on to a plate & these cakes would slide off easily onto the plate.



10. Sprinkle with icing sugar & decorate it with a strawberry on the top.



11. Serve hot with strawberries/raspberries/cherries & a scoop or two of ice cream of ur favorite choice. 








Notes:

1. If you do not have a microwave, then you may use a double boiler to melt ur chocolate chips.

2. Do not dust flour after greasing ur ramekins with non stick cooking/baking spray.

3. It is said that if you put these ramekins into your fridge for an hour, the quality of the cakes is much better. I am not sure about this but you may try it out if you wish to.

4. Mine was done in 8 minutes but if your using a bigger size ramekin or your using a cup cake mould or something smaller in size to bake this, then you will have to set ur timer accordingly. If your using a smaller container, then it is going to be done much faster or if your oven is too hot, it might be done sooner. If u feel ur cake is not set at 8 minutes, then keep it for a minute longer but do not let it cook fully.

5. A couple of tips for you to know the right time to take the cake out of the oven 

A.  The cake needs to be firm on the outside(sides) & the center needs to be soft & runny but it should not super jiggly.

B. Another tip is that the center needs to be concave. Do not let the center puff up, as the cake will be fully done when the center puffs up, so you need to take the cake out when the center is still concave. (See picture #9)

6. I have used semi sweet chocolate so I didn't add any sugar. If your using dark chocolate, then you may need to add sugar.

7. This cake tastes best when served hot so don't let it sit for long before you eat it.

8. You may even use one cup dark chocolate & 1 cup semi sweet chocolate.

9. If you let the cake cook fully, then it is going to be a moist chocolate cake with no lava flowing out. You may not get it right the first time till you know your oven, once you know it, you will be able to make the perfect lava cakes.

10. If you follow the above steps right, then there is no way that this recipe can go wrong ðŸ˜Š
