No Flour Eggs & Plantains Upside Down Tawa Cake



Ingredients

1. Plantains/Nenthrapazham 2 ripe 
2. Eggs 5 Large
3. Ghee 2 tbsp plus 1 tbsp
4. Halved cashews 3 tbsp 
5. Raisins 2 tbsp 
6. Sugar 3/4 cup
7. Cardamom powder 1 tsp

Method Of Preparation

1. Slice the plantains vertically into two & cut those vertical pieces further into halves(like how you see it in the pic). Do not make the slices too thin or too thick. You need to further cut each of the vertical slice into a horizontal half. (I forgot to do this so I cut each slice horizontally after I fried them in oil, but please remember to do it before frying)



2. In a non stick pan, add a tbsp of ghee & fry the cashews until they turn golden brown. Remove them onto a plate. 



3. In the same pan, add raisins & fry until they puff up.



4. Add 2 tbsp of ghee in the same pan and fry the plantains on medium heat till the plantains change color & turn golden a little on one side, then flip to the other side & just cook for a few seconds till the other side becomes a bit golden here & there too. Remove them onto a plate & keep it aside.







5. In a bowl add eggs, sugar & cardamom powder. Using an electric beater, beat on a low speed for about 2 minutes until everything gets mixed well & the eggs become fluffy.





6. Add the fried raisins & cashews to this mixture & using a spoon, mix everything together. Now add the fried plantains to this & again using a spoon, mix well.



7. Grease an 8" non stick skillet with ghee & pour this mixture on it. Turn on the flame to very low & cover & cook for 35-40 minutes.



8. Once cooked, the top part becomes hardened & not jiggly. If u insert a skewer it should come out clean, that is also an indication that ur cake is set.



9. Invert(turn over) this onto a plate & allow it to become warm.



10. Once warm, cut the cake into squares & serve with hot tea.




Notes: 

1. You may reduce an egg if you don't want to use 5. I hope it wont affect the taste.

2. The batter was perfect for an 8" pan. I got the shape of a cake. If you don't have an 8" pan, then you can use a bigger one, but if you use a very large pan, then you may not get the shape of a cake but you will get a pancake😊

3. It took almost 40 minutes for my cake to get done but if your using a bigger pan, it should be done in 15-20 minutes so you need to keep an eye.

4. Please do not cook on a high flame as the bottom will get burnt fast & the top part will remain uncooked so cook only on a very low flame.

5. You need to use nice ripe & sweet bananas & not the unripe hard ones. 

6. Follow the above steps exactly & you will be able to make the perfect cake ðŸ˜Š
