Restaurant Style Apollo Fish Fry
Ingredients
A. For Marination
1. Salmon/tilapia or any fish of your choice 400 grams
2. Turmeric powder 1/4 tsp
3. Red Chilli powder 1 tsp
4. Paprika 1/2 tsp
5. Garam masala 1/2 tsp
6. Black pepper powder 1/2 tsp
7. Ginger garlic paste 1 tbsp
8. Soy sauce 1-1/2 tbsp
9. Juice of 1 lemon
10. Corn starch 2 tbsp
11. Eggs beaten 1
12. Chopped curry leaves 2 sprigs
13. Salt to taste
B. For Tempering
1. Garlic sliced 15
2. Green chillies slit 10
3. Curry leaves 2 sprigs
4. Coriander leaves 2 sprigs
5. Oil 1 tbsp
C. For Frying
1. Oil 11/2 cups
Method Of Preparation
A. Marination & Frying
1. Clean the fish well & cut them into strips & marinate them with salt, turmeric, red Chilli powder, Garam masala, black pepper powder, ginger garlic paste, paprika, chopped curry leaves, well beaten egg, corn starch, soy sauce & juice of lemon.
2. Leave it aside on the countertop for 2 hours.
3. Heat oil in a pan & when it becomes hot, drop the marinated fish strips in the oil & deep fry them. Fry only few strips at a time. Do not overcrowd the pan with too many fishes.
B. Tempering
1. Add oil in a skillet & on a medium heat, add the garlic slices & green chillies & curry leaves. Cook them till the garlic becomes a little soft & becomes golden in color.
2. Add the fried fish strips & mix them well with the garlic & green chillies.
3. Garnish with chopped coriander leaves.
Notes
1. Increase or decrease the quantity of spices as per your preference.
2. Restaurants add a pinch or two of MSG to the marination. It enhances the taste of the dish. You may add it if you wish to.
