Paneer Bhurji
Ingredients
1. Paneer 300 grams
2. Cumin seeds 1/2 tsp
3. Finely chopped onion 1 cup
4. Ginger garlic paste 11/2 tbsp
5. Finely chopped tomatoes 11/2 cup
6. Turmeric powder 1/4 cup
7. Red Chilli powder 1/2 tsp
8. Garam masala 1/4 tsp
9. Kitchen King masala 1/2 tsp
10. Green peas 1/2 cup
11. Capsicum chopped 3 tbsp
12. Paste of 15 cashew nuts
13. Warm milk 4 tbsp
14. Salt to taste
15. Oil 2 tbsp
Method Of Preparation
1. Boil green peas in a cup of water. Drain the water & keep the peas aside.
2. Soak cashews in 4 tbsp of hot water for 15 minutes. After 25 minutes, grind the cashews along with water to a fine paste.
3. Heat oil in a pan. When the oil gets hot, add the cumin seeds.
4. When the seeds splutter, add the chopped onions.
5. When the onions turn translucent add the ginger garlic paste & sauté till the raw smell goes away.
6. Now add the tomatoes & salt & cook until it becomes mushy & well cooked.
7. Add the turmeric powder, red Chilli powder, garam masala, kitchen king masala. Mix the spice powders with the base & sauté till the raw smell goes away.
8. Add the cashew nut paste & cook for about three minutes till the raw smell goes away.
9. Now add the green peas & capsicum & cook for about two minutes.
10. Add the grated/shredded paneer & mix well & cook for a minute. You can choose to turn off the gas now or if you want a little gravy, then you might add warm milk & mix it well & turn off the gas.
11. Garnish with coriander leaves.
12. Serve hot with phulkas/rotis & pulao.
Notes
1. Adjust the quantity of spices as per your spice level tolerance.
2. Addition of capsicums & peas is completely optional
