Spicy Tawa Soya Chunks Fry





1. Ingredients


A. For The Marinade 

1. Soya Chunks 180 grams 
2. Chilli powder 2 tsp 
3. Garam masala 1 tsp 
4. Kasuri methi leaves 2 tsp 
5. Salt to taste 
6. Oil 2 tbsp for sautéing the soya chunks 

B. For The Fry 

1. Jeera/cumin seeds 1 tsp 
2. Ajwain/carom seeds 1/4 tsp 
3. Onions finely chopped 1 cup
4. Ginger paste  1 tsp
5. Garlic paste 11/2 tsp 
6. Green chilli paste 1 tsp 
7. Red capsicum chopped 1 cup(you can use any color of your choice)
8. Tomatoes chopped 1 cup 
9. Chilli powder 11/2 tsp
10. Garam masala powder 1/2 tsp
11. Coriander powder 1/2 tsp
12. Turmeric powder 1/2 tsp
13. Well beaten yogurt 7 tsp heaped
14. Kasuri methi 1 tsp 
15. Chopped coriander leaves a handful 
16. Salt to taste 
17. Oil 11/2 tbsp

2. Method Of Preparation 

A. Preparation Of The Marinade 

1. Wash the soya chunks well in cold running water & keep them aside.



2. Add water in a saucepan & bring it a rolling boil & turn off the flame. 

3. Now add the soya chunks & let it sit in the water for 15 minutes.

4. Drain the chunks onto a colander & rinse them under cold running water & squeeze out the excess water out of the chunks & cut each chunk into two equal halves.




5. Marinate the halved soya chunks with Chilli powder, garam masala, kasuri methi leaves & salt. Leave it aside on the countertop covered for 30 minutes. 



6. Add 2 tbsp oil in a pan. When the oil gets hot, add the soya chunks & sauté them in the oil for around 8-9 minutes. Remove them from the pan & keep it aside.





7. In the same pan, add 11/2 tbsp oil. When the oil gets hot, add cumin seeds & when it splutters, add the ajwain/carom seeds.

8. Add the chopped onions. When the onions turn translucent, add the ginger garlic green Chilli paste. Sauté for a few seconds till the raw smell goes away. 



9. Now add the chopped red capsicums & cook for around 2 minutes till the it becomes soft yet firm.



10. Now add the chopped tomatoes & cook till it becomes mushy. 



11. Add the soya chunks into the pan & mix them well with the base. 



12. Add the turmeric powder, red Chilli powder, coriander powder, garam masala & mix well. Sauté for a minute. Do a taste test & see how much salt needs to be added & add it accordingly. Remember that you have already added salt to the soya chunks so do not add too much salt. 



13. Then add the well beaten yogurt into this & mix it well with the chunks. 





14. Sprinkle kasuri methi & add coriander leaves & mix it well & turn off the flame. 



15. Serve hot with rice, pulao, chappatis/rotis.
