Fish Moilee/Fish Molee
Ingredients
1. For The Marinade & Frying The Fish
A. Black pepper powder 11/2 tbsp
B. Salt
C. Juice of 1 lemon
D. Oil 2 tbsp
2. For The Curry
A. King fish 12 pieces medium size
B. Onions 1 cup
C. Tomatoes chopped 1 cup
D. Ginger garlic paste 11/2 tbsp
E. Green chillies 5
F. Pepper 2 tsp(optional)
G. Warm water 3 cups
H. Coconut milk powder 11/2 cups
I. Curry leaves 2 sprigs plus 1 sprig
J. Turmeric powder 1/4 tsp
K. Salt to taste
L. Small cloves 4
M. Green cardamom 4
N. 2 Cinnamon sticks 1"
O. Coconut oil 1 tbsp
2. Method Of Preparation
1. Marinating & Frying The Fish
A. Marinate the fish pieces with pepper salt & lemon juice.
B. Cover it & leave it on the countertop for an hour.
C. After an hour, shallow fry the fishes on a medium flame till done.
2. Making The Curry
A. Add coconut milk powder to 3 cups of warm water & mix it well. Make sure there are no lumps in the mixture. Set it aside.
B. Add oil in a pan. Once the oil gets hot, add cardamom, cloves & cinnamon sticks.
C. Once the spices emit a nice aroma, add 2 sprigs of curry leaves & onions & saute till the onions turn translucent.
D. Add the ginger garlic paste & chopped green chillies & sauté till the raw smell goes away.
E. Then add the chopped tomatoes & salt & sauté till the tomatoes become soft & mushy.
F. Then add the turmeric powder & pepper powder(optional) & sauté for a minute.
G. Now add 2 cups coconut milk & let it boil on a medium flame.
H. Once it begins to boil, add the fried fish pieces & 1 sprig of curry leaves & let it boil for a minute.
I. Then add the remaining coconut milk & after a few seconds turn off the flame. Do not let the curry boil after adding the remaining coconut milk.
Notes:
1. The marinade should be a little wet only then the marinade will stick on the fish, so add enough lemon juice to make it wet but make sure it is not a watery marinade. Add or reduce the quantity of black pepper if you wish to.
2. The curry should only be a mild yellow color(lemon yellow) so added only the above mentioned quantity of turmeric powder.
3. Reduce the quantity of pepper in the curry if you want to.
