Vegetable Stew



Vegetable Stew


Ingredients 

1. Carrots & beans finely chopped 2 cups 
2. Potatoes cubed 2 cups
3. Green chillies 5 slit 
4. Ginger finely chopped 1 tbsp 
5. Onion 1 thinly sliced 
6. Coconut milk 2 cups(2 cups of hot water mixed in 1 cup of coconut milk powder)
7. Curry leaves 2 sprigs 
8. Water 
9. Salt to taste 
10. Coconut oil 1 tbsp 

Method Of Preparation

1. Add the carrots, beans, potatoes, onions, green chillies, ginger & salt in a pressure cooker. 

2. Add water just an inch above the level of vegetables & cook upto 4 whistles. When done, turn off the flame & after a while open the cooker. 

3. After opening the cooker, add 2 cups of coconut milk to the boiled vegetables & turn on the gas on a medium flame. When it begins to boil, add the curry leaves & drizzle a tbsp of coconut oil & give it a stir & turn off the gas. 






Notes: 

1. Do not let the stew come to a rolling boil after adding the coconut milk.
