Kerala Prawns/Shrimp Roast
Ingredients
1. For Marinating The Prawns/Shrimp
A. Extra Jumbo Prawns/Shrimps 11/2 lb(30 prawns)
B. Pepper powder 1 tsp
C. Garam masala 2 tsp
D. Turmeric powder 1/4 tsp
E. Salt to taste
2. For The Masala
A. Pearl onions/shallots 1 cup
B. 15 garlic minced
C. 2 tbsp ginger minced
D. Green chillies 5 slit
E. Curry leaves 4 sprigs
F. Kudampuli/gamboge 2
G. Coconut bits a handful
H. Turmeric powder 1/4 tsp
I. Red Chilli powder 2 tsp
J. Coriander powder 3 tsp
K. Salt
L. Juice of 1/2 lemon
M. Coconut oil 2 tbsp
Method Of Preparation
1. Soak Kudampuli/gamboge in warm water for 15 minutes.
2. Preparing The Marinade
A. Clean & wash the shrimp & marinade it with turmeric powder, pepper powder, Garam masala & salt. Cover it & leave it on the countertop for 30 minutes.
3. Preparing The Masala
A. Heat oil in a pan & add the shallots.
B. When the shallots turn translucent, add the garlic & ginger minced, green chillies & sauté them for about 3-4 minutes. Add the curry leaves.
C. Add the turmeric powder, red Chilli powder & coriander powder & sauté well till the raw smell from the spices go away. Add salt if needed. Remember you have already added salt to the marinade.
D. Now add the shrimps along with the left over marinade that is left in the pan. Then add the kudampuli after discarding the water in which it was soaked.
E. Add the coconut bits.
F. Mix everything together & cook covered on a medium-low flame for 10 minutes or till the shrimps are done. Do not add any water to cook the shrimps.
G. After 10 minutes, open the lid & see if there's any water left in the shrimp. If there is, just open & cook so that all the water evaporates.
H. Now add 2 tsp more of coconut oil & curry leaves & stir everything together & cook for a couple of minutes more till the shrimps are well roasted & brown & then turn off the flame. For the final roasting you may turn the flame to high to get the shrimps roasted well but make sure you stay near the gas.
I. Serve hot with plain rice.
Notes:
1. Let the prawns be a little wet, only then the marinade will stick to the prawns.
