Bakery Style Egg Puffs



Ingredients 

1. For the Filling 

A. Boiled egg halves 10
B. Cumin seeds 1/2 tsp
C. Chopped onions 11/2 cup
D. Curry leaves 1 sprig 
E. Ginger garlic green chilli paste 2 tsp 
F. Turmeric powder 1/4 tsp 
G. Chilli powder 1/2 tsp 
H. Garam masala 3/4 tsp 
I. Pepper powder 1/4 tsp 
J. Fennel powder 1/4 tsp(optional)
K. Tomato ketchup 11/2 tsp(optional)
L. Oil 2 tsps
M. Salt to taste 
N. Wheat flour for dusting 

2. Puff pastry sheets 
3. Milk wash 


Method Of Preparation 

1. Preparation Of The Filling 

A. Add oil in a pan. When the oil gets hot, add cumin seeds. 



B. When the seeds splutter, add the curry leaves & onions. Sauté till they turn translucent.



C. Add ginger garlic green chilli paste & sauté till the raw smell goes away. 



D. Add turmeric powder, red chilli powder, Garam masala, fennel powder. Mix everything well & cook till the raw smell goes away. 

E. Add the black pepper powder & tomato ketchup & mix everything together well. 



F. Add the boiled halved eggs & mix it well with the masala.




G. Turn off the gas & let the mixture cool 

2. Preparation Of The Puffs

A. Preheat the oven to 425 F

B. Thaw the pastry sheet on your countertop for an hour or until it's pliable enough to work with without cracking. Once thawed, take a pastry sheet out of the pack. I used Pepperidge Farms Puff Pastry Sheets. 




C. Open it & cut though the folds into three equal strips. 





D. Dust your countertop with some wheat flour. 

E. Dust one side of the pastry strip with some flour & then dust the other side.




F. Using a rolling pin, roll out the sheet a little. 



G. Cut it into two equal squares.



H. Place a tbsp of filling on one of the pastry squares & pull one side onto the egg & then apply some milk wash on the edges & bring the other side over & using your fingers, seal the edges properly. 







I. Repeat the same with the other two sides too.



 

J. Brush the egg puff with milk wash.



K. Line a baking tray with parchment paper. 

L. Place the egg puffs on it & put the tray into ur pre-heated oven & bake at 425 F for 20-22 minutes.




M. Once down, remove it from the oven.

N. Serve the puffs with ketchup & a cup of coffee.




Notes: 

1. Increase or decrease the quantity of spices as per your souls level tolerance. 

2. Adding tomato ketchup makes the puff taste like the one that you get in bakeries. 

3. If you don't have ketchup, replace it with finely chopped tomatoes. 

4. Make sure to seal the edges firmly otherwise they will open up while baking in the oven.
